    Our bartender and sommelier will teach you how to make a wonderful and refreshing drink.

  • Chicken and cheese risotto with basil

    This is real risotto. It is not made with Japanese rice in a machine. It is made with real risotto rice with homemade stock, traditionally by hand. We finish it with our own organically grown herbs.

  • Seasonal salad with balsamic vinegar dressing

    We will choose the freshest and best looking salad items and prepare a wonderful white balsamic vinegar dressing with a premium Greek organic olive oil.

  • Selected wine by our sommelier

    Our resident sommelier will select a wine to accompany your risotto and chicken.

  • Stewed apples in a cardamom and nutmeg jus

    Apples are cooked in white wine with nutmeg, cardamom and sugar. Finally topped with strained honey yogurt.

Menu Overview

The Italian community in Canada has played a crucial part in its development. Its cuisine is forever mixed within the cultural elements of Canadian cuisine. In this Italian inspired menu, we will bring you risotto. So you think you know risotto? Chances are you do not. Risotto is not rice cooked in a lot of water akin to Congee in Chinese cooking. No. Risotto is a special rice, a high starch rice with a lot of creaminess and it must be cooked in layers. Discover the secrets of risotto tonight. We look forward to seeing you. Host Introduction

私は日本に住んで約10年になるカナダ人です。

文化と人種のるつぼであるカナダの料理は、カナダ建国に携わった勤勉な移民のもたらした食材と調理法をベースとしています。 カナダ料理は様々な文化の影響を受けています。まず主要貿易相手国でもあるアメリカの影響。 

カナダ人はハンバーガーを愛し夏の暑い日庭先でのBBQを楽しみます。またカナダは英国連邦の下にあったため、英国の影響も受け、フィッシュ&チップス、ステーキやキドニーパイなどのパブ料理を提供するパブもたくさんあります。 

私はホテル、レストラン、教育業界などで20年以上勤めておりました。高級ホテル(リッツ・カールトン)で多くのシェフと仕事をし、世界中を旅して、さまざまなスタイルの料理にトライしてきしました。 

料理教室につきましては1993年から携わっております。 

2013年から2015年まで中目黒に料理スタジオを開いておりました。コンセプトは英語を使って料理をすること。どのレッスンもおもしろくて、学びの多い一体感の生まれるものとなりました。私たちは楽しい友だち作りのできる環境を整えることも目指しました。 

幸いにも私は世界の何カ国かに住んだ経験があり、その間さまざまな文化や価値観を受け入れてきました。 

私は食を国籍、宗教、信念にかかわらず人々を結びつける媒体と考えています。私のキッチンでは、食、人、意見の尊重を大切なものと考えております。 

私の食への考え方はシンプルです。可能であれば有機的なものを使うこと。パン、パフペーストリー、パスタを除いてすべてが地産であること。化学物質は論外です。 

私たちの世界はどんどん小さくなっています。今私たちは、違う文化に簡単に出会い、楽しむことができる幸せな時代にいるのです。さあ、食、人、それぞれの文化に乾杯しましょう! 

そして素敵な人生に乾杯を!

How to reserve & reservation process

  4. Go to the host's home on the day and have a great time with everyone!

  1. All of the guests go to the host's home. After everyone arrives, at the host’s home, be greeted with a welcome drink and snacks.

About leftovers: after eating, please make sure you check with the host what can be taken home. Food taken home remains your own responsibility, so please be careful about food poisoning etc.

Payment should be made before the lesson. We accept credit card or bank transfers.

On the booking page you’ll be able to select your booking method and see payment instructions.

Cancellations are possible after making a booking. Refunds are as shown below:

・If cancellation is made more than 10 days before the lesson (AM0:00): 100% refund

・If cancellation is made between 5 and 10 days before the lesson (AM0:00): 50% refund

・If cancellation is made less than 5 days before the lesson (AM0:00): no refund

      誕生日でもないのに『ハッピーバースデーを2回歌う』で始まるDenisさんのレッスンは、楽しく・厳しく・ためになるレッスンでした! Denisさん自身は、下準備以外の調理はせず、レッスン中の調理はゲストがすべて行います。 ゲスト同志で味見して調整し『OKはダメ、求めるの味はGreatだ』と高いハードル。 Denisさんは車椅子を巧みに使い、小まめにゲスト達の作業を確認して指摘してくれるので達成感高くレッスンが進みます。 『乳化とはミルクのようになること』との私の理解を『性質の異なる液体が…(略)』との説明で、私は認識を新たに。 この時のテーマは忘年会、ロング缶ビールを片手にしながらのレッスンで、試食ではDenisさんも含め3人で2本のワインを空け、Denisさんの『The surest way to destroy the memory』をしっかり実感。 量も味もドリンクもGreatで、レッスン前のチャットでのゲストへの気遣も高く、レッスン中の会話でも私のような低レベルの英語力でもしっかり聞き取ってくれます。 段差の無い玄関で、トイレの扉も幅広く、車椅子のゲストも快適かも♪ ぜひまた、他のレッスンで参加させて頂きます!
