Al- Kobbeh is traditional dish in Aleppo and it was known by Assyrians and Babylonians. In Aleppo city more than 70 kinds of Kobbeh. Aleppo called the mother of Kobbeh. Kobbeh Kassabeiah is the easeist kind of Kobbeh. It is very easy to do and very tasty. you can bake it in the oven or grill it in barbecue time. A little amount of bulgur mixed with a lot of minced meat, onion, and walnuts and some Arabic spices.The mixture of bulgur and meat, Arabic ghee gives very special taste and smell. It is very popular dish in Social occasions.
It is one of many kinds of Fatteh in Syria. we sometimes eat as a main dish or a kind of abitizer.It is very easy dish and tasty. A fried eggplants mixed with a coocked tomato sause and miced meat. Another sause contains yogurt, tahina, lemon, garlic... etc. should be prepared. In a big dish you put fried bread then cover with the tomato suace, then add yogurt sauce. we decorate it with almond or another kind of nuts. The mixture of tomato sauce, eggplant, yogurt sauce and fried bread give it very special taste. I have tried it in many cooking event and all Japanese people love it.
It is one of the most famous abtizer in Syria. People from all nationalities love it too much. It is grilled eggplants we take off its skin and paste with tahina, lemon, garlic, we decorate it with cumin, babrica, and olive oil then we eat with bread.
Many kinds of Arabic desert contain simolina. It is very healthy and gives a good tase. simolina desert with cream is very easy to do and delicious. It is simolina mixed with eggs, vegetable oil, sugar, vanilla. we bake half of the amount in the oven then we prepare the cream to add on the first half of baked mixture then we cover it with the second half of the mixture and we bake it. when it is ready we cover with sugar syrup and decorate with pistachio and cocconuts.
It is a popular drink in Syria. we make it with fresh or dried mint. it is very healthy and good for stomachach and spasm
I am from Aleppo city which is very famous in the middle east in a very delicious food.
I love cooking too much and I did many classes for Japanese and foreigners it was very interesting.
