Greetings! My name is Stacey and I am from Jamaica. I have been living in Japan for almost seven years. I first lived in Nara City and then I moved to Osaka. I love cooking as much as I love eating. I believe that you can tell a lot about a people by their cuisine. Growing up, my mum always cooked succulent traditional Jamaican dishes. She loved to cook. She spent most of her time cooking, not just for our family but for everyone who dropped by. She believed that you should always cook enough so in the event you have unexpected visitors, they too can join you at the table. It was such joy watching her and helping her in the kitchen. You are probably wondering what is ital cooking and why ital cooking. Ital is a term coined by Rastafarians from Jamaica. The principle behind ital cooking is that food should be natural, from the earth and in season. In addition, animal products such as meat, fish, eggs, and cheese etc. are not used and ingredients must be fresh without being chemically altered. My journey into ital nutrition is a continuation of my spiritual quest to finding balance and harmony with nature. I enjoy energizing people with food that is not only delicious but food that nourishes the body, mind and soul.
